With views of the open night sky scattered with stars and the ambience of flickering lanterns, your final course of Madagascar’s finest is served. Yellowfin tuna ceviche with salted lime, crisp ginger, island greens, pickled Mango to start, and a main course of cinnamon smoked local duck breast, red plums, vanilla rum & orange sauce and island pumpkin.
The day then ends just as it began, with the delightful sun-ripened fruits — this time served in the form of a bright array of sorbets garnished with candied orange.
