From October to April, the sea is alive with movement. Some days bring the hypnotic rhythm of trolling across an endless horizon, others the sudden explosion of a GT smashing a popper on the surface. Jigging into the depths may reveal yellowfin or dogtooth tuna, while fly fishing over reefs and drop-offs offers encounters that test both strength and finesse. On the flats, wading through warm shallows as the tide pushes in, you may find yourself chasing bluefin kingfish or watching parrotfish glint like jewels in the light.

Most of what is caught here is released back into the ocean. But some species that are of a correct size are brought back to shore, where our chefs prepare them for you with care.
